Named in honor of Louis Fauchère’s close friends—the legendary Delmonico brothers—The Delmonico Room celebrates a deep culinary lineage. Before founding the Hotel Fauchère in 1852, Louis Fauchère served as a master chef at the original Delmonico’s restaurant in New York, a pioneering establishment that introduced Parisian à la carte fine dining to America.
Like Fauchère, the Delmonicos were French-speaking natives of Switzerland, and together, they helped shape the beginnings of true American fine dining.
Inspired by this legacy, our menu pays homage to the classic dishes and techniques that made Delmonico’s a culinary institution—reinterpreting tradition with contemporary flair.
