Located within the historic Hotel Fauchère, The Delmonico Room offers a refined dining experience rooted in the rich traditions of regional American cuisine. Surrounded by elegance and history, guests enjoy thoughtful, seasonal dishes crafted with the finest local ingredients.

Our Rich Heritage

Named in honor of Louis Fauchère’s close friends—the legendary Delmonico brothers—The Delmonico Room celebrates a deep culinary lineage. Before founding the Hotel Fauchère in 1852, Louis Fauchère served as a master chef at the original Delmonico’s restaurant in New York, a pioneering establishment that introduced Parisian à la carte fine dining to America.

Like Fauchère, the Delmonicos were French-speaking natives of Switzerland, and together, they helped shape the beginnings of true American fine dining.
